Mango Coconut Cake

Ingredients

  • 3/4 c salted butter (room temperature)
  • 1-1/2 c sugar
  • 1/2 t vanilla extract
  • 1/2 t coconut extract
  • 3 large eggs
  • 1-3/4 c flour
  • 1/2 c hi-maize fiber flour
  • 1 t baking powder
  • 1/2 c heavy cream
  • 1/2 c diced mangoes
  • 1/2 c shredded coconut

Preparation

Step 1

Heat oven to 325. With mixer on medium speed, beat first 4 ingredients for 3 minutes. Beat in eggs. In seperate bowl, combine next 3 ingredients. With mixer on low speed, alternately add flour mixture and cream. Beat 30 seconds. Add mangoes and coconut; pour into greased and floured 9x13 pan. Bake 1 hour. Let cool in pan 30 minutes. Run knife around sides of pan to remove cake.
