You can also make this with chicken. Boil 2 large breasts. Let cool & remove the meat. Strain the fat out of the cooking water (which is now chicken stock) and add more water to make the 6 cups if needed.

Ingredients
- 1 lb ground beef (or chicken option below)
- 1/2 onion chopped fine
- 1 can corn
- 1 can chili beans
- 1 can chopped green chilies
- 1 can pinto beans (rinsed)
- 1 can chopped tomatoes
- 1 can black beans (rinsed)
- 1 pkg taco seasoning
- 6 cups water or stock
- Fresh cilantro
- Jalapenos
- Cheddar cheese
- Sour cream
- Tortilla chips

Preparation
Step 1
1. In a stock pot or large pan, brown ground beef and onion. Drain the fat. Add corn, chili beans, green chilies, & chopped tomatoes (I don’t drain any of these). Add the rinsed black beans & pinto beans, taco seasoning & water.
2. Let simmer for at least an hour. Serve over tortilla chips with cilantro, jalapenos, cheddar cheese and sour cream to garnish.
