Ingredients

  • 1 (9-inch) unbaked pie shell
  • 3 tbsp salad oil
  • 2 medium onions, sliced
  • 2 garlic cloves, sliced
  • 8 cups sliced green tomatoes (about 4 large or 3 pounds)
  • 3 tbsp chopped parsley
  • 2 tbsp flour
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded Cheddar cheese (about 4 ounces)

Preparation

Step 1

Preheat oven to 400 F. Bake pie shell for 5 minutes; set aside. In large skillet, heat oil. Add onions and garlic and saute until tender, about 3 to 5 minutes. Add tomatoes and cook over medium-high heat until soft, about 15 minutes, stirring occasionally. Sprinkle on parsley, flour, salt and pepper and stir until well mixed. Spoon into pie shell. Sprinkle on cheese. Bake for 15 minutes or until browned. Cool 5 minutes before slicing.
