  • 3/4 cup plus 1 tbsp butter
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups sifted flour
  • 1 tsp almond flavoring
  • Dash salt
  • Flour
  • 1/4 cup slivered almonds
  • Powdered sugar to taste

Step 1

1. Preheat oven to 350F. Melt butter in 10" cast iron skillet. Whisk the eggs in large bowl until blended. Add sugar, 1 1/2 cups flour, the flavoring and salt; mix until combined. Stir in melted butter.

2. Coat the cast iron skillet lightly with flour and pour the batter into the skillet. Sprinkle with almonds. Bake for 30 mins or until cake begins to pull from the side of skillet. Do not overbake. Immediately wrap the cake in foil to keep moist. Dust with powdered sugar before serving. Serve with fresh fruit.
Note: Use the 1 Tbsp. melted butter to coat skillet. The 3/4 cup melted butter goes into the cake.
