Ingredients
- 2/3 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Frying chicken (2 lb.dressed and cleaned)
- 3/4 cup Wesson Oil
- 2 1/2 cups milk
- Parsley

Step 1
Combine 1/2-cup of the flour with 3/4 teaspoon of the salt and pepper in a shallow pan.Cut chicken into serving pieces,pat them dry with cloth or paper toweling and roll in flour mixture to coat.Any flour left in bowl may be used for gravy.Let chicken stand 10 minutes to dry coating.Meanwhile heat Wesson oil in skillet;place chicken in hot fat,thicker pieces first.Brown slowly 10 minutes on each side;lower heat;cover tightly and cook gently 20 to 30 minutes,turning pieces occasionally and cooking until chicken is thoroughly done.Remove chicken and keep warm,making gravy.Blend milk gradually with remaining flour util smooth.Add 1/4 teaspoon salt.Pour slowly into fat in skillet,stirring constantly to keep smooth.Simmer gently 5 minutes,stir occasionally.To serve garnish chicken with parsley.Serve gravy separately.
