Cheesy tomato tartlets

Ingredients

  • One sheet frozen puff pastry, thawed
  • 1/4 cup coarsely grated white cheddar cheese
  • 3 to 4 a Italian Plum tomatoes cut into quarter inch thick slices
  • Salt-and-pepper
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh thyme leaves for garnish

Preparation

Step 1

Preheat oven to 375.
on lightly floured surface, unfold puff pastry sheet. With 2 inch round biscuit cutter, cut out as many rounds of pastry as possible. Place rounds on ungreased jellyroll pan.

With fork, prick surface of pastry rounds. Divide cheddar evenly among the rounds, top each with one sliced tomato. Sprinkle tarts with salt and pepper. Sprinkle each tart with heaping teaspoon Parmesan.

Bake tarts 24 minutes or until pastry is golden and cheese is bubbly. Garnish with Thyme leaves.
