Ingredients
- 1/2 cup smooth natural peanut butter
- 1/2 cup light coconut milk (or skim milk if you don’t like the coconut)
- 1/2 cup water
- 4 teaspoons soy sauce
- 2 tablespoons rice vinegar (optional – good without)
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 cloves crushed garlic
- Red Pepper flakes (to taste depending on how spicy you like it)

Preparation
Step 1
Throw everything into a medium saucepan and whisk well
Heat over medium heat until sauce begins to bubble and thicken.
You only want the sauce to thicken slightly until it just starts to coat the back of a spoon because it will thicken quite a bit more while it stands and once you've poured it over your
pasta or whatever you're serving it with.
If it gets too thick, thin it with a little bit of chicken broth or skim milk.
