Apple Almond Coffee Cake (From Mom)

Ingredients
- 3 Medium size Granny Smith Apples sliced thin
- 2 cups all purpose flour
- 1 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon of salt
- 1/2 cup (one stick) of softened margarine chunked
- 1/2 cup milk
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- Buy a jar of apple jelly (I use almost the whole jar (3/4); usually only one size jar in the store)
- 1/2 cup of sliced almonds (or to your taste)

Preparation
Step 1
Mix together all dry ingredients with margarine until it crumbs, add milk, eggs and vanilla and almond extract.
Spread batter in a greased and floured 9” spring pan.
Arrange sliced apples in circular pattern close together (push slightly into mixture)
Spoon the apple jelly on top of apples (this does not have to be smooth, just place jelly all over the top)
Then top that with almonds.
Bake 15 minutes at 450 degrees; lower to 350 degrees and continue baking for 50 minutes (do not over cook, it will be dry);
To test toothpick should come out clean and not wet.
Cool 15 minutes or so remove outer pan when ready to eat; warm or cold.
