Ingredients
- 8 oz puff pastry
- 1/4 cup butter
- 1/2 onion, chopped
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1/2 cup each of blanched, chopped green beans and asparagus
- 3 eggs
- 1/3 cup of 1/2 & 1/2
- roma tomatoes, sliced
- 1/2 tsp fresh thyme, chopped
- salt and pepper, to taste
- 1/2 cup Cheddar cheese
- 1/4 cup crumbled Chevre

Step 1
Roll out puff pastry to fit a large tart pan (fit the pastry up the sides). Poke with a fork and freeze partly.
Saute onion, until golden, in butter. Add red and yellow pepper and saute until soft. Add the green beans and asparagus to the mixture. Put into the puff pastry.
Beat the eggs with the 1/2 & 1/2. Pour over the vegetables. Top with sliced roma tomatoes, thyme and salt and pepper. Sprinkle cheeses over top.
Bake at 425F for 20-25 minutes.
