Ingredients

  • 3 tbsp flax seeds
  • 1/2 cup water
  • 1 cup fresh-squeezed orange juice
  • 1/3 cup real maple syrup
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1/2 cup fruit-sweetened orange marmalade
  • 3 cups whole-wheat pastry flour
  • 1 tbsp double-acting, nonaluminum baking powder
  • 1 tsp baking soda
  • 1 tsp ground cloves
  • 1/4 tsp salt

Step 1

Grease 12 muffin cups or line with paper liners. Heat oven to 375 F.

Grind flax seeds in a blender. Add the water and process until slightly gummy, about 30 seconds. Add the orange juice, maple syrup, oil, vanilla and marmalade; blend until frothy, about 2 minutes.

In a large bowl, combine the flour, baking powder, baking soda, cloves and salt.

Stir the flax mixture into the dry ingredients just until all the flour is absorbed.

Fill each muffin cup almost to the top. Bake on the middle oven shelf until the tops are lightly browned and bounce back to a gentle touch, 20 to 25 minutes.

Cool in pan on a rack for 2 minutes before unmolding. Eat warm or, if storing for later use, cool immediately.
