No-Peek Beef Stew

"This is a great stew recipe from an elderly friend who served it for years for her family. I finally got her to share!! This is very easy to prepare, and my family really enjoys it!"

Ingredients
- 1 -2 lb stew meat ( I like 1 1/2 lbs.)
- 4 potatoes, peeled and quartered
- 2 medium onions, peeled and sliced ( white or yellow)
- 2 cups carrots ( I use the mini carrots)
- 2 garlic cloves, minced
- 2 tablespoons tapioca
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon pepper ( I use seasoned pepper)
- 1 (10 1/2 ounce) cans tomato soup
- 1 3/4 cups water

Step 1
Combine all above ingredients into a large baking dish; cover with aluminum foil.
Bake for 5 hours at 250 degrees -- NO PEEKING!

I have made this today with a temperature of 48* outside....and it is true...after 2 hours, I even had neighbors come over and ask what I was fixing. I always make baking powdered biscuits with this meal. The only change I do is that my kids like chopped tomatoes and a TON of different spices. I love this recipe and it will stay in my recipe box for generations to come!!
Comfort food! It's a brisk 61º here in Tampa Bay and I decided I wanted to cook something that required a long-simmer/cook to get some nice smells going on while watching college football, and picked this recipe. Sorry for the run-on sentence, hope you took a breath, lol. After 2 hours the whole house was smelling terrific! At 3 hours, my eyes were just about rolling into the back of my head so I had to break rule #2 - yes, I peeked, lol! I waited the full 5 hours and the beef was completely tender and vegetables were perfect. The gravy was the crowning touch - fabulous! I will always use this beef stew recipe from now on, I've only ever used cream-of-mushroom soup before, but the tomato soup with all the other seasonings gives it a MUCH better flavor. Thanks so much for this keeper!
