Ingredients
- Veggies:
- 1 1/2 lbs. medium sized beets (can be various colors)
- olive oil
- 2 - medium red onions, cut into wedges
- 2 T honey
- Israeli feta (OPTIONAL)
- Dressing:
- 2-3 T red wine vinegar
- 4 cloves garlic, minced
- 3-4 T chopped roasted walnuts
- 1 T Olive oil
- 1/4 cup currants or raisins
- 2 T honey

Preparation
Step 1
Preheat oven 400*.
1. Simmer beets in water to cover in large sauce pan for 15 minutes.
2. Drain and rinse in cold water.
3. Peel beets; cut in fourths.
4. Coat beets with 1 T olive oil.
5. On a jelly roll pan w/ foil, add beets and onions. Drizzle with 2 T honey.
6. Transfer beets and onions to serving bowl.
7. Combine dressing and drizzle over beets and toss.
8. Add currants and walnuts; toss.
9. Season to taste with salt and pepper.
10. Sprinkle with Israeli feta (Optional, Alie addition)
