Ingredients
- 3 Tbsp olive oil, divided
- 6 Tbsp chopped walnuts, toasted, divided
- 1 Tbsp chopped shallots
- 1 Tbsp cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and black pepper
- 1 triangle steak (4-6 oz), seasoned with salt and black pepper
- 5 cups sliced romaine lettuce
- 2 Tbsp crumbled blue cheese
- 1/2 Pink Lady apple, sliced

Preparation
Step 1
Preheat oven to 450F.
Pulse 2 Tbsp oil, 2 Tbsp walnuts, shallots, vinegar, Dijon, and honey in a mini food processor until walnuts are minced; season with salt and pepper.
Sear steak in remaining 1 Tbsp oil in an ovenproof skillet over high heat until browned, 2 minutes. Flip steak and transfer skillet to the oven. Roast steak until medium-rare, 3 minutes; let rest 5 minutes, then slice.
Toss romaine with blue cheese, apple, remaining 4 Tbsp walnuts, and vinaigrette; serve with steak.
