You can also leave the skin on the russet potatoes for a different texture in this dish. Both russet and new potatoes taste nice with the skin on. Sweet potato skin, however, does not usually taste good in recipes.

  • 2 sweet potatoes
  • 2 russet potatoes
  • 1 1/2 cups butternut squash
  • 1/4 cup butter or trans fat–free margarine
  • 1/2 to 1 cup whole milk (dairy or soy)

Preparation

Step 1

Peel potatoes and squash and cube them into pieces of about the same size. Usually 1–2″ cubes work the best.

Bring a pot of water to a boil. Place potatoes and squash in boiling water and boil for about 20 minutes.

Drain potatoes and squash and place in mixing bowl.

Add butter and smash with a potato masher or hand mixer.

Add milk to reach desired texture.
