Ingredients

  • 2 cups white whole-wheat flour
  • 1 1/2 teaspoons baking powder, divided
  • 1/2 teaspoon salt
  • 1/2 cup applesauce
  • 1/2 cup flaxseed meal
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1/4 cup coconut milk
  • 1 cup chocolate chips
  • 3/4 cup coconut flakes

Preparation

Step 1

Preheat oven to 350°F.

In a medium mixing bowl combine flour, 1 teaspoon baking powder, and salt.

In a large mixing bowl combine applesauce with ½ teaspoon baking powder. Add flaxseed meal, canola oil, brown sugar, and coconut milk.

Slowly add dry ingredients to wet. Stir to combine.

Stir in chocolate chips and coconut flakes.

Bake 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
