  • 1 pound ground beef
  • 1 pound ground pork
  • 2 teaspoons sea salt
  • 2 teaspoons oregano
  • 1/2 teaspoon chipotle powder
  • 2 egg yolks
  • Cilantro for garnish
  • Sauce
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 cup beef broth
  • 1/4 teaspoon chipotle powder
  • 2 tablespoons honey
  • 1 teaspoon oregano
  • Sea salt and pepper to taste

Step 1

In a medium size mixing bowl, thoroughly mix together all of the meatball ingredients with your hands and set aside.

Add the onion, garlic tomato sauce and beef broth to your slow cooker and mix well.

Add the honey and spices and whisk together.

Form the meat mixture into meatballs that are just larger than a golf ball. Gently drop each meatball into the sauce in the slow cooker.

Cover and cook on low for six to seven hours. Serve garnished with cilantro.
