***Mim and Dude's Crabcakes

Bob and I have tried crabcakes all over the world. And, we shamelessly think our recipe is the best we've found. We love our crab cakes sauteed in butter and olive oil -- NOT deep fried. And NO, peppers -- we are purists and don't want flavor interference.

Ingredients

  • 1-1/2 lb. fresh crabmeat
  • 1 egg, beaten
  • 1/2 c. Panko breadcrumbs
  • 1/2 c. mayonnaise
  • 1/2 c. fresh chopped chives
  • 2 cups Panko breadcrumbs
  • Butter/Olive oil

Preparation

Step 1

Mix together crab, egg, 1/2c. Panko breadcrumbs, mayonnaise and chives.

2 Gently form into crabcakes. Gently cover with thin dusting of panko breadcrumbs on both sides and place on a baking sheet. Overwrap with plastic and chill for 2 hours.
Heat frying pan to medium heat and melt 2 tbsp. butter in 2 tab.olive oil. Fry crabcake 3 minutes on each side or until golden brown on each side and heated through.
