- 7/8 c all purpose flour = 1 c cake flour
- 2 T cornstarch every 7/8 c all purpose flour

These subs will perfor better if you
1. Mix the batter as little as possible.
2. Separate eggs, beat the whites, and fold them into batter.
Pastry flour (little less delicate and crumbly)
7/8 c all purpose flour + 2 T cornstarch for every c cake flour. (less delicate and crumbly)
