Black Bean and Pumpkin Soup

Instead of using 3 cans of black beans, I used a whole package of dried black beans. Put in a crock pot over night with 6 cups of water (I believe it was). Cook on high for one hour and then low over night. Easy!

Maybe next time play with putting 2 cans of pumpkin in?

Ingredients

  • 3 (15-19 ounce) black beans, rinsed and drained
  • 1 (14 ounce) can drained chopped tomatoes
  • 1 T butter
  • 2 medium chopped onions
  • 3 cloves garlic, minced
  • 1/8 t salt
  • 1 t ground pepper
  • 4 t cumin
  • 4 1/2 cups chicken broth
  • 1 (16 ounce) can pumpkin
  • sour cream for garnish

Step 1

In a blender, puree beans and tomatoes in several batches. In large pan heat butter on medium add onion, garlic, salt, pepper, and cumin. Cook ~6 minutes. Stir in beans and tomatoe puree add broth and pumpkin. Mix wel. Simmer 30 minutes.
