Ingredients

  • 2 slices of plain bacon wrapped around 1 large bunch of thyme and then tied with cooking string
  • 1 whole onion, chopped
  • 4 chopped cloves of garlic
  • 4 cups ketsup
  • 1/2 cup light brown sugar
  • 1/2 cup molasses
  • 4 tablespoons red or white wine vinegar
  • 2 tablespoons dry mustard
  • 2 teaspoons ground cumin
  • 2 teaspoons plain or smoked paprika

Preparation

Step 1

Heat 2 tablespoons or so of olive oil in a large saucepan over medium heat, and saute the bacon wrapped thyme to render as much fat as possible...about 3 or 4 minutes.

Add onion and garlic and cook slowly for about 5 minutes. Add remaining ingredients and stir and then turn down the heat to low and cook slowly for about 20 minutes. Put in a mason jar and only give it to your favorite people.
