Ingredients

  • 1 med. onion-chopped
  • 2 or 3 cloves garlic-minced
  • 3 stalks celery-sliced
  • 2 tbls. olive or veg. oil
  • 4 med. potatoes-diced
  • clams
  • 2 to 3 cups stock/bullion (chicken)
  • 1 cup half and half
  • salt and pepper

Preparation

Step 1

Sauté onion, garlic and celery in olive oil
Add cubed potatoes and clams
Add stock until potatoes covered
Boil, then simmer cover and cook till potatoes tender.
Right before serving add half and half till soup thickens and begins to boil (3-5 min.) Remove and serve.
