Ingredients

  • 1 Tbsp oil
  • 1 lb chicken cut into small pieces
  • 14 oz coconut milk
  • 3 Tbsp red or green Thai curry paste (Mae Ploy is good)
  • 6 scallions, chopped
  • 3 Tbsp cilantro, chopped
  • 1-1 1/2 Tbsp cornstarch with 2 Tbsp water (optional for thickening)
  • Heat oil in a preheated wok on high heat.
  • Add a little coconut milk and curry paste to mix Add chicken until
  • chicken is almost cooked.
  • Add the rest of the coconut milk, cook until chicken is done (15 min) If
  • you like a thicker sauce, mix the cornstarch with water and add slowly
  • until desired consistancy Add cilantro and scallions Serve with rice.
