Ingredients

  • 2 (15-ounce) cans cannellini, or other white beans, drained and rinsed well
  • 1/3 cup light olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon cold water
  • 2 tablespoons chopped green onions, light parts
  • 2 garlic cloves, peeled, sliced
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon Italian parsley, chopped
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne, or to taste
  • chives to garnish, optional

Preparation

Step 1

Add all of the ingredients to the bowl of a food processor, and process the mixture until completely smooth. May be garnished and served immediately, but best if refrigerated for an hour.
