Ingredients
- 2 (15-ounce) cans cannellini, or other white beans, drained and rinsed well
- 1/3 cup light olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon rice vinegar
- 1 tablespoon cold water
- 2 tablespoons chopped green onions, light parts
- 2 garlic cloves, peeled, sliced
- 1 tablespoon fresh mint, chopped
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon Italian parsley, chopped
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne, or to taste
- chives to garnish, optional

Preparation
Step 1
Add all of the ingredients to the bowl of a food processor, and process the mixture until completely smooth. May be garnished and served immediately, but best if refrigerated for an hour.
