Step 1

Heat 3-4 quarts of water, add of sugar and salt per above formula. Heat and stir to dissolve. Cool, pour salt/sugar mixture into cooler. Add turkey and water until turkey almost covered. Add ice until turkey covered. Stir. Turkey should brine at least 24 hours but longer is better. Add ice as needed to keep cold.
