Ingredients

  • 4 cups warm water
  • two packages yeast
  • 3/4 cup brown sugar
  • 5 cups whole wheat flour
  • 1/4 cup wheat germ
  • 4 teaspoon salt
  • 1/2 cup oil
  • 5 cups white flour
  • 1/2 cup cracked wheat
  • 1/2 cup bran optional

Preparation

Step 1

Dissolve yeast in 3 cups warm water and brown sugar. Heat remaining 1 cup water to boiling and pour over wheat, bran, wheat germ. Let sit about one half hour until yeast becomes bubbly and wheat softens. Combine all ingredients. Mix in wheat flour before white. Let rise once in bowl. Shape into loaves and placie in pans. Makes three large loaves. Bake at 375° for 15 minutes then lower to 325° for 45 minutes.
