Ingredients

  • 6 slices of bacon
  • 10 slices of sandwich bread
  • 4 eggs
  • 1 1/2 cups milk
  • 2 tablespoons sugar, plus 2 more tablespoons sugar for topping
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, soft
  • 1 teaspoon ground cinnamon

Preparation

Step 1

Lay 6 pieces of bacon on a cookie sheet and bake in 350 degrees F oven (do not preheat) for 15 minutes. Remove bacon from oven (leave oven on) and transfer to paper-towel covered plate to cool and drain fat. Cut 10 slices of sandwich bread (I used white bread) into bite-sized pieces. Spray cooking oil in a 9"x13" casserole dish, then dump bread pieces into the casserole dish. Break bacon into small pieces and scatter on top of bread pieces. In a large bowl, beat 4 eggs with 1 1/2 cup milk, 2 tablespoons sugar, 1/4 tablespoon salt, 1 teaspoon vanilla extract, and 1 tablespoon softened butter. Pour over bread and bacon. For the topping, mix 2 tablespoons sugar with 1 teaspoon cinnamon, then sprinkle generously over the casserole. Place casserole dish in a 350 degrees F oven for 45 minutes. Serve warm with maple syrup. Feeds 4-6. I actually made this for our dinner, but it would be great for breakfast or lunch too!
