  • 1/2 head cauliflower
  • 1 garlic clove
  • 1/4 yellow onion
  • 1 pound grass-fed ground beef
  • 1/2 cup fire-roasted salsa
  • 1 small can fire-roasted diced green chilis
  • 1 egg
  • 1/2 cup almond flour
  • 2 1/2 teaspoons chili powder
  • 3/4 teaspoon cumin
  • 3/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 5 tablespoons tomato paste
  • Salt and pepper to taste

Step 1

Using a food processor, finely chop the cauliflower, garlic and onion and set aside.

In a large mixing bowl, combine the ground beef, salsa, chilis and egg.

Add the cauliflower, garlic and onion mixture to the beef mixture.

Add the almond flour and spices to the beef mixture. Using your hands, kneed and mix all of the ingredients together.

Shape the beef mixture into a loaf and place it in the slow cooker.

Using a spatula, evenly spread the tomato paste on top of the meatloaf.

Cover and cook on high for four hours or until the internal temperature of the meatloaf has reached 160 F. Salt and pepper to taste.
