Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 6 ounces Cheddar cheese, shredded (1 1/2 cups), divided

Step 1

Preheat oven to 375 F. Spray 12 cup muffin pan with nonstick cooking spray, or line muffin pan with 12 paper muffin liners; set aside.

In large bowl combine flour, sugar, baking powder and salt. Add milk, oil and eggs. With wooden spoon, stir until just combined. Stir in spinach and 1 1/4 cups cheese. Evenly spoon batter into prepared muffin pan. Sprinkle muffins with remaining 1/4 cup cheese. Bake 20 to 25 minutes until wooden pick inserted in center comes out clean and cheese on top is melted. Serve with butter or margarine.
