Ingredients

  • Thickening agent:
  • 3 slices crisp bacon, chopped
  • 4 cups frozen or fresh corn kernels
  • 1 medium onion, chopped
  • 1 large potato (peeled, chopped, and fast-boiled in water for approx. 4 minutes. Drain.)
  • 2 Tbsp. butter
  • 2 4-oz. cans diced green chiles, drained
  • 32 oz. chicken broth
  • 1 1/2 cups half and half, heavy cream or whole milk
  • 3 Tbsp. cornmeal dissolved in 1/4 cup water

Preparation

Step 1

Saute diced onion and bacon pieces over medium high heat with butter. Add dash of salt and pepper. When onions begin to soften, add drained green chiles and potatoes.

Pour in chicken broth and cream. Add another pinch of salt.

Bring to a low boil and add thickening agent.

Simmer 15 minutes.
