Jo’s Sundried Tomato Chicken

Ingredients

  • Olive oil
  • butter
  • chicken breasts, boneless and skinless
  • seasoned flour in a ziplock
  • red wine
  • portabello mushrooms, sliced
  • garlic
  • sundried tomato/garlic mix
  • small can tomatoes
  • oregano
  • Fresh pasta

Preparation

Step 1

Melt oil and butter together. Dredge chicken in flour. Saute chicken until browned. Add garlic near end. Remove from pan. Add tomato/garlic mixture and sauté. Add canned tomatoes, wine, oregano, mushrooms. Cook for 10 minutes or until it looks right. Add chicken until heated through.

Serve over fresh pasta
