  • 4 egg whites (room temperature)
  • 1/4 tsp Cream of Tartar
  • 1 cup superfine granulated sugar
  • 1 TBSP cinnamon
  • 1 TSP ground ginger
  • 1 TSP allspice
  • 1 TSP ground cloves
  • 1 TSP nutmeg

Preparation

Step 1

Preheat oven to 200⋅.

Mix cinnamon, ground ginger, allspice, ground cloves, and nutmeg together, set aside.

Using a stand mixer or hand mixer, begin to mix the egg whites, when they start to thicken add the cream of tartar. Continue to mix until soft peaks begin to form.

Add the granulated sugar, a little at a time over the course of several minutes. When you are finished adding the sugar mixture, add the spice mixture in the same way.

Continue to mix over medium speed until the meringue is glossy and hard peaks have started to form. This can take several minutes, so be patient!

Place meringue mixtures via spoonful or pastry bag on a parchment lined baking sheet and place in the oven for an hour and a half. Turn off the oven and let gradually cool.

Side note: if you can’t make get all the meringues made on the first try, you may need to remix the leftover meringue mixture until hard peaks once again form.
