Preparation
Step 1
1. STIR together the mayonnaise and adobo sauce in a small bowl.
2. PLACE 4 bread slices on a work surface. Spread the mayonnaise on the bread slices. Layer with the onion, cilantro, and cheese and top with the remaining bread slices.
3. COAT the top bread slice of each sandwich with cooking spray. Place the coated side down on the grill pan or skillet. Coat the remaining bread slice of each sandwich with cooking spray. Place a heavy pan over the top of the sandwiches. Cook for 2 minutes, then turn and repeat.
Recipe Tip: A panini or sandwich press works well for making these sandwiches, although an indoor grill (George Foreman) also will do the trick. Place the sandwiches (coated with cooking spray) on the press or grill, close the lid, and press slightly. There's no need to turn the sandwiches.
