Ingredients
- 1/4 Cup Shallots, minced
- 4 Whole Peppercorns
- 3/4 Cup Dry White Wine
- 1-1/4 Cups Heavy Cream
- 1 Lb. Softened Unsalted Butter
- Salt, to taste
- Juice of one Lemon
- 3 Cups Shitake Mushrooms, stemmed and sliced
- Peanut oil for frying
- 2 Tablespoons Fresh Ginger, minced
- 1 Cup Scallions, sliced
- 1/2 Cup Teriyaki Sauce
- 6 - 8 Oz. Tuna Filets

Preparation
Step 1
In a saucepan, combine shallots, peppercorns and wine and cook until reduced by half. Add cream and reduce again. Add butter and season with salt and lemon juice.
In a skillet, saute mushrooms in oil approx 5 minutes. Add ginger, teriyaki and scallions and saute for a few additional minutes. Remove from heat and add to butter sauce.
Grill the tuna and then pour the sauce over it before serving.
