Ingredients
- 4 large egg whites
- 1 can (8 ounces) crushed pineapple in juice
- 1/2 cup sugar
- 1/3 cup lowfat 1% milk
- 3 tbsp vegetable oil
- 3 tbsp unsulfured molasses
- 4 ounces 100% Bran cereal (1 1/2 cups wheat bran or 2 cups whole bran flakes)
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp ginger
- 1/2 tsp salt

Preheat oven to 375 F. Spray 12 (2 1/2-inch) muffin cup pans with vegetable cooking spray.
Whisk egg whites, pineapple, sugar, lowfat milk, vegetable oil and unsulfured molasses in bowl until blended. Stir in 100% Bran cereal. Let stand 5 minutes.
Combine flours, baking powder, ginger and salt in another bowl. Stir dry ingredients into bran mixture until just blended. Spoon into prepared muffin cups.
Bake 20 to 25 minutes, until toothpick inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan and cool completely.
