Ingredients

  • Pastry
  • 5 lb or 7 ob flour
  • 18 or 24 eggs
  • 18 or 24 Tbsp. sugar
  • 18 or 24 Tbsp. oil
  • 2 Tbsp vanilla
  • Filling
  • 6 lb or 9 lb ricotta cheese
  • 2 c. or 3 c. sugar
  • 2 Tbsp. vanilla
  • 4 or 6 eggs

Preparation

Step 1

1. Mix pastry dough ingredients thoroughly and put under bowls to rise for awhile (about 15 minutes).
2. Mix filling and set aside.
3. Break dough into small pieces and put in covered dish with just a little flour on it so it won't stick.
4. Roll dough; cut size of a soup dish. Put about 2 Tbsp. of cheese mixture on dough and fold over. Press dough with fingers to seal. Put a small hole in the dough.
5. Beat egg yolk and brush on top of folded product. Bake at 350 degrees
F for 1/2 hour.
