Ingredients

  • 8 oz. Slivered Almonds
  • 6 large eggs, separated
  • 1 cup Sugar
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • 1/4 t. almond extract
  • 1/2 t. vanilla extract
  • confectioner's sugar for dusting

Preparation

Step 1

1. Preheat oven to 350*.

2. Spray a 10" spirngform pan well with nonstick cooking spray.

3. Finely grind the almonds in a food processor.

4. Add egg yolks, sugar, zests and extracts and process until smooth.

5. Transfer to a large bowl.

6. With an electric mixer, whip the egg whites in a large bowl until stiff peaks form.

7. Fold the whites into the almond mixture.

8. Transfer the batter to the prepared pan, and bake 40-50- minutes or til the cake feels firm to the touch.

9. Remove from oven and cool.

10. Run a knife around the edge of the pan and remove the collar.

11. Dust the cake generously with confectioner's sugar. and cut into wedges.
