Ingredients

  • 2 lbs ground beef, cooked and drained
  • Onion, chopped
  • Minced garlic
  • 1/2 cup cottage cheese
  • 1 can tomato paste
  • 1/3 can enchilada sauce
  • Low carb tortillas

Preparation

Step 1

Preheat oven 350.
Cook and drain meat. Add onion and minced garlic. Cook until union is translucent. Add cottage cheese, tomato paste and enchilada sauce.
Layer a 9x13 pan with meat mixture, cheese and low carb tortillas.
Bake until hot and bubbly.
