Ingredients

  • 1 1/2 lb pork tenderloin
  • 1/2 c. maple syrup
  • 2 T. soy sauce
  • 2 T. catsup
  • 1 T. dijon mustard
  • 1 1/2 t. curry powder
  • 1 1/2 t ground coriander
  • 1 t. Worcestershire sauce
  • 2 cloves garlic minced

Step 1

Place pork in a large, heavy-duty plastic zipping bag; set aside. Whisk together syrup and next 7 ingredients in a medium bowl. Pour over pork; refreigerate at least on hour.
Transfer pork with marinade to an ungreased 13x9 pan. Bake, uncovered, at 350 degrees for 35 minutes or until a meat thermometer inserted into thickest portion registers 155 degrees. Let stand, covered, 10 minutes or until thermometer registers 160 degrees. Thinly slice and drizzle with sauce from pan.
