MEAT LOAF-Mini-Meat Loafs 1 Picture

Ingredients

  • 1 1/2 pounds ground beef
  • 1 egg, lightly beaten
  • 1 cup PACE picante sauce
  • 1 1/2 teaspoons ground cumin
  • 1/2 cup very finely crushed tortilla chips or corn
  • 1 teaspoon salt
  • 1/2 cup (2 ounces) shredded sharp cheddar or monterey jack cheese
  • 1 medium onion, finely chopped

Preparation

Step 1

Combine meat, 3/4 cup of the picante sauce, chips, onion, egg, cumin and salt; mix well. Shape to form 6 oval-shaped loaves; place on rack of broiler pan or on rack in large shallow baking pan. Bake in preheated oven at 375°E about 25 minutes or to desired doneness. Spoon remaining picante sauce over meat loaves; sprinkle with cheese. Serve with additional picante sauce. Makes 6 servings.
