Lower carb Rice Pilaf

This is my compromise version of a low carb recipe to satisfy my carb loving hubby. It uses half rice/ half cauliflower. Not a true low carb recipe, but lower carb than an all-rice version.

Ingredients
- 2 tsp. chicken bouillon (or 2 cubes crushed)
- 1/2 tsp. garlic salt
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 1 c. grated cauliflower
- 2 tbsp. water
- 1/4 c slivered almonds
- 1 tbsp. butter
- 1 c. cooked long-grain white rice
- 1/4 c. butter

Step 1
In a microwaveable bowl, combine bouillon, garlic salt, curry powder, salt, and pepper. Add grated cauliflower and water. Cover. Microwave 1 min. on high.
In a large fry pan, melt 1 tbsp. butter. Add almonds and cook until lightly golden. Remove and set aside.
Melt 1/4 c. butter. Add rice and cauliflower mixture. Cook until heated through. Add almonds and cook one more minute.
