- For the sauce:
- 1 cup plain yogurt
- 1 Tbsp chopped fresh mint
- 1 Tbsp chopped fresh cilantro
- 1 tsp grated fresh garlic
- 1 tsp grated fresh dinner
- For the patties:
- 8 cloves garlic
- 1/2 cup chopped onion
- 1/2 cup chopped fresh ginger
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp ground cardamom
- 1/2 tsp red pepper flakes
- 2 Tbsp canola oil
- 1 lb ground sirloin
- 1/4 cup minced fresh mint
- 1/4 cup minced fresh cilantro
- 4 flatbreads, warmed (6-inch)
- Fresh mint leaves and cilantro sprigs, for serving

Step 1
For the sauce, combine yogurt, 1 Tbsp mint, 1 Tbsp cilantro, grated garlic, and grated ginger; season with salt and pepper.
For the patties, mince 8 cloves garlic, onion, and chopped ginger in a food processor. Saute the aromatics with 1.5 tsp salt, 1 tsp black pepper, cardamom, and pepper flakes in oil in a large saute pan until onion is softened and dry, about 5 minutes; cool.
Pulse ground sirloin in a food processor until fine, then mix with sautéed garlic mixture, 1/4 cup mint, and 1/4 cup cilantro. Shape meat mixture into 12 patties. Seat patties on a griddle coated with nonstick spray over medium heat until browned on both sides, 8-10 minutes total.
Serve 3 patties on each flatbread topped with sauce, mint leaves, and cilantro sprigs.
