Ingredients
- 1 lb zucchini
- 1 lb eggplant
- oil
- 1 onion sliced
- 2 T parsley
- 8 oz sliced mushrooms
- 8 oz jar roasted pimientos drained
- 1 1/2 lbs beef
- 1 t salt
- 1 t oregano
- 1 6 oz can tomato paste
- 6 drops tabasco sauce
- 1 can cheddar cheese soup
- 1/4 c parm cheese

Preparation
Step 1
1.Wash and dry eggplant and zucchini. cut both into pieces and then slice.
2.in skillet cook eggplant, zucchini, onion, and parsley over medium heat for 15 minutes. still occasionally. then add mushrooms and pimientos. cover and keep warm on stove.
3. in another skillet saute the beef and then take out the fat. stir in salt, oregano, tomato paste, and tabasco. cook and stir for several minutes.
4. heat cheese soup till boils.
5. in several casserole dishes put veggies around the edge and meat in the middle. cover all with soup. sprinkle parm cheese on top.
6. put under broiler till cheese gets brown.
