Ingredients

  • 2 tsp veg or peanut oil
  • 4 large red chilis, seeded and chopped
  • 1 tbsp grated ginger
  • 3 tbsp lime juice
  • 3 tbsp fish sauce
  • 1/3 cup brown sugar
  • 4 chicken breasts
  • 2 tbsp cilantro leaves, chopped

Preparation

Step 1

Heat a frying pan over med-high heat. Add the oil, chilis and ginger and cook for 1 min. Add the lime juice, fish sauce and brown sugar, and cook, stirring, for 1 minute.
Add the chicken and cook for 8 minutes.
Increase the heat to high, turn the chicken and cook for a further 5 minutes or until golden, sticky and cooked through. Sprinkle with cilantro and serve with rice or steamed veggies.
