VEG****Penne with Vodka Cream Sauce for One (WW)

I like this a lot. I tried it on Dan and although he said he liked it, he could only eat half a bowl so I don't think I'd bother putting it in front of him anymore - it's easy enough to make just for me.

n.b. It calculates at 9 points either with light cream cheese OR with whipping cream but only 1 tablespoon of whipping cream vs. 1 oz. of cream cheese.

Ingredients

  • 1 Serving
  • 1 1/2 oz. Catelli Smart Penne Rigate or Gnocchi
  • 1 tsp. EVOO
  • 1 medium shallot, finely minced
  • 1 clove garlic, minced
  • 8 - 10 cherry tomatoes, halved or quartered
  • pinch of red pepper flakes
  • pinch of malden salt
  • 1 tbsp. tomato paste
  • 2 tbsp. chicken broth
  • 1 tbsp. vodka
  • 1 oz. light cream cheese - I tried the sun-dried tomato and basil one the last time, it was pretty good
  • 1 -2 tbsp. slivered fresh basil
  • 1 tbsp. grated fresh parmigiano reggiano

Preparation

Step 1

* Cook pasta according to package directions, drain and plate.

* Meanwhile, saute shallot in oil over medium heat until tender, adding garlic and pepper flakes for last 30 seconds or so. Add tomatoes and continue to cook over medium heat while they break down. Season with Malden salt. About 3 minutes before the pasta is done, add the tomato paste and chicken broth to the sauce and simmer another minute until thickened.

* Reduce heat slightly and add the vodka, stirring to incorporate it, then the cream cheese and the basil, stirring gently to melt the cheese. Reduce the heat to low if you have to hold the sauce while the pasta finishes cooking.
