A slightly different chicken salad that uses wild rice. Makes a very elegant lunch salad. I added 1 diced, unpeeled apple to the original recipe for a touch of sweetness and extra crunchiness.

Ingredients

  • 1 cup cooked wild rice, cooled
  • 2 cups cooked chicken, chopped, cooled
  • 1 cup finely chopped celery
  • 1 cup chopped red pepper
  • 1/2 cup crumbled crisply cooked bacon
  • 1/2 cup finely chopped nuts (optional)
  • 1 diced unpeeled apple (Gala, Fuji, Pink Lady, Crispin)
  • 1 tablespoon lemon juice
  • 1/2 cup or more mayonnaise (I prefer light)
  • Lettuce
  • 3 hard-boiled eggs, sliced

Step 1

Combine rice and chicken with celery, red pepper, apple, bacon, nuts, lemon juice and mayonnaise.

Serve salad on a bed of lettuce topped with sliced eggs.
