Wild Rice Salad

A slightly different chicken salad that uses wild rice. Makes a very elegant lunch salad. I added 1 diced, unpeeled apple to the original recipe for a touch of sweetness and extra crunchiness.

Ingredients
- 1 cup cooked wild rice, cooled
- 2 cups cooked chicken, chopped, cooled
- 1 cup finely chopped celery
- 1 cup chopped red pepper
- 1/2 cup crumbled crisply cooked bacon
- 1/2 cup finely chopped nuts (optional)
- 1 diced unpeeled apple (Gala, Fuji, Pink Lady, Crispin)
- 1 tablespoon lemon juice
- 1/2 cup or more mayonnaise (I prefer light)
- Lettuce
- 3 hard-boiled eggs, sliced

Step 1
Combine rice and chicken with celery, red pepper, apple, bacon, nuts, lemon juice and mayonnaise.
Serve salad on a bed of lettuce topped with sliced eggs.
