Ingredients

  • 4 chicken breasts
  • 1 cup flour
  • 1 tsp garlic powder
  • 1/2 tsp salt and pepper
  • 1 T olive oil
  • 2 T butter
  • 1 T chopped basil
  • 1 T fresh parsley
  • 2 T pine nuts
  • 2 T lemon juice
  • 2 T white wine

Preparation

Step 1

1. Pound chicken to flatten between wax paper.

2. Place flour, garlic, and s/p in bowl. Mix

3. Coat chicken in mixture, shake off excess

4. Heat oil and 1 T butter in skillet and saute chicken until light brown. Remove from heat and keep warm in 200 degree oven.

5. In same skillet melt 1 T butter and pine nuts. Add basil and parsley. When butter bubbles splash in lemon juice and white wine. Simmer 2 minutes. Pour over chicken and serve with pasta.
