Ingredients

  • 2 sweet onions
  • 2 pounds tomatillas
  • 2 pounds ripe tomatoes
  • 2 bunches cilantro
  • 3 teaspoons salt
  • Juice of 3 limes
  • 2 fresh jalapeños no seeds
  • 2 fresh habaneros no seeds

Preparation

Step 1

Cut tomatillos into quarters and process in a Cuisanart into fine chunks but stop short of liquifying. Pour into a large bowl.

Cut tomatoes into chunks and process same as tomatillos. Add to bowl.

Cut onions into chunks, process, add to bowl.

Remove any large stems from the cilantro. Remove seeds from peppers (use kitchen gloves). Process cilantro and peppers together. Add to bowl.

Add salt and lime juice, add to bowl, mix together.
