Ingredients
- Crust:
- 1 c. flour
- 1 stick butter or margarine
- Mix together and pat into 9x13 pan.
- Rhubarb layer:
- 4 c. fresh rhubarb, diced fine
- 1 1/3 c. sugar
- 3 T. flour
- Combine in bowl, pour onto crust and bake at 350 for 15 min.
- Cream layer:
- 16 oz. cream cheese
- 2 eggs
- 1/2 c. sugar
- Beat cream cheese and sugar until fluffy. Add eggs one at a time; pour over rhubarb layer and bake at 350 for 30 min. Combine 8 oz. sour cream, 2 T. sugar, 1 tsp. vanilla
- Spread over hot layer and chill well.
