Rhubarb Cheese Cake

Ingredients

  • Crust:
  • 1 c. flour
  • 1 stick butter or margarine
  • Mix together and pat into 9x13 pan.
  • Rhubarb layer:
  • 4 c. fresh rhubarb, diced fine
  • 1 1/3 c. sugar
  • 3 T. flour
  • Combine in bowl, pour onto crust and bake at 350 for 15 min.
  • Cream layer:
  • 16 oz. cream cheese
  • 2 eggs
  • 1/2 c. sugar
  • Beat cream cheese and sugar until fluffy. Add eggs one at a time; pour over rhubarb layer and bake at 350 for 30 min. Combine 8 oz. sour cream, 2 T. sugar, 1 tsp. vanilla
  • Spread over hot layer and chill well.
